La Fiòca, Tesa, Camaione e Quintalane, located in the municipality of Corte Franca (BS), mid hill, cultivation with Guyot system (5000 stubs per Ha).

Chardonnay 100%.

how we get it:


Unlike others Franciacorta, the production regulation provide that it can be obtained by only impress of white grapes. The must is obtained through cold fermentation at low temperatures (14/16°C). A second addiction of sugar during the bottoling phase for refermentation (20 gr/lt insted of 24 gr/lt) determines a diffrent formation of the foam with a lower pression in the bottle (5 atm insted of 6 atm). This results as a greater creaminess and smoothness of the wine followed by yeast maturation for at least 24 months. Manual remuage on pupitres and disgorging are carried out manually.

  • Alcohol: 12,5 % vol.
  • Sugar: 2,0 grammi/litro;
  • Total acidity: 7,00 grammi/litro

Organoleptic test:


Colour: staw yellow with golden reflections
Perlage: soft and durable foam of a myriad of small and persistent bubbles.
Gentle fragrance that recalls tropical fruit, vanilla and in a small part the custard
Taste: wine a little bit evolved that reminds the bread crust with mild notes of rosted and spicy.

Note: Serve it at a temperature of 6-8°C, better if placed in a bucket containing ice
