La Fiòca, Camaione e Quintalane, located in the municipality of Corte Franca (BS), mid hill, cultivation with Guyot system (5000 stubs per Ha.).

Grapes

Chardonnay.

Technical production

The must, obtained after a soft impress of the grapes, is completly fermented in stainless steel containers. The base wine is kept in contact with its own yeasts and stirred periodically batonage until the bottoling period, to give it greater complexity. After the foaming stage, it undergoes a maturation on the yeasts for at least 30 months. It is produced only in certain vintages and is proposed in the single type Non Dosato; at disgorgment to restore the level is used the same wine .

Sugars: 1 gr/lt
Total acidity: 7,00 gr/lt

Organoleptic test:

Colour: straw yellow with coppery reflection.
Perlage: Abundant and persistent, creamy foam.
Fragrance: Gentle, pleasent evolutionary notes.
Taste: good structure and sapidity, elegant, rightly evolved, reproposes the sensation percived to the nose.

Notes: Serve it at the temperature of 8/10°C in good sized glasses; for its peculiar characteristics can be also served throughout the meal.
